Watermelon Salad Recipe By Ray McVinnie

  • 1.25kg watermelon, peeled, seeded and diced 4cm

  • 1 red chilli, thinly sliced

  • zest of 1 lime

  • 1 kaffir lime leaf, very thinly sliced

  • 1 tablespoon thinly sliced coriander stalks plus coriander sprigs for serving

  • 50g palm sugar

  • 3 tablespoons lime juice

  • large pinch salt.

  • 30g freeze dried mandarin segments (optional)

  • 425ml can coconut cream

Put everything except the mandarin segments (if using) and coconut cream into a bowl and toss gently but well.

Place on a serving platter, sprinkle the mandarin segments and some coriander sprigs on top and serve with the coconut cream on the side.

Serves 6.
